Jalapeno Corn Fritters

Crispy on the outside and tender on the inside, these jalapeno corn fritters are bursting with flavor and perfect for any occasion.

Ingredients

  • 1 cup corn kernels
  • 12 jalapeno peppers, diced
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1 egg, beaten
  • Oil for frying
  • 1/2 cup ranch dressing
  • 12 tablespoons Sriracha (to taste)

Instructions

  1. Prep your ingredients by measuring and prepping.
  2. Mix the dry ingredients in a large bowl.
  3. Add the wet ingredients to the dry mix and stir gently.
  4. Incorporate the corn and jalapenos into the batter.
  5. Heat about 1/4 inch of oil in a frying pan over medium heat.
  6. Fry the fritters for 2-3 minutes on each side until golden brown.
  7. Drain the fritters on paper towels.
  8. Make the dipping sauce by mixing ranch dressing and Sriracha.

Notes

For a gluten-free option, substitute all-purpose flour with gluten-free flour blends.
