1½ lbs (about 700 g) baby potatoes, halved
2 tbsp olive oil
2 tbsp Dijon mustard
1 tbsp yellow mustard
2 cloves garlic, minced
½ tsp smoked paprika
½ tsp onion powder
¼ tsp cayenne pepper (optional)
½ tsp salt (or to taste)
¼ tsp black pepper
2 tbsp grated Parmesan cheese
1 tbsp chopped fresh parsley (for garnish)
Optional dipping sauce:
3 tbsp mayonnaise
1 tbsp Dijon mustard
1 tsp honey
Squeeze of lemon juice
Instructions
Preheat your oven to 425°F (220°C).
Rinse the baby potatoes under cold water and halve them.
In a small bowl, whisk together olive oil, Dijon mustard, yellow mustard, garlic, smoked paprika, onion powder, cayenne pepper, salt, and black pepper.
Pour the mustard mixture over the halved potatoes and toss until evenly coated.
Line a baking sheet with parchment paper and spread the potatoes cut side down.
Sprinkle the grated Parmesan cheese over the potatoes.
Bake for 25-30 minutes, flipping halfway through.
Garnish with fresh parsley and serve hot, optionally with dipping sauce.
