Crispy Yellow Squash Fritters

Deliciously crispy yellow squash fritters that are easy to make and perfect for any occasion.

  • 2 medium-sized yellow squashes
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh herbs (optional)
  • Vegetable oil, for frying

Instructions

  1. Prepare the Squash: Start by washing your yellow squashes. Trim off the ends, then grate them using a box grater or food processor. Squeeze out any excess moisture using a clean kitchen towel or cheesecloth.
  2. Mix the Base: In a large mixing bowl, combine the grated yellow squash, flour, Parmesan cheese, garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until well incorporated.
  3. Add the Eggs: Crack the eggs into the mixture and stir until evenly mixed and thick enough to hold together.
  4. Heat the Oil: In a large skillet, pour in about 1/4 inch of vegetable oil and heat it over medium heat. Test by dropping a small scoop of the mixture in; if it sizzles, you’re ready to fry.
  5. Fry the Fritters: Drop the fritter mixture into the hot oil using a tablespoon. Flatten gently with the back of the spoon. Fry for about 3–4 minutes on each side, until golden brown and crispy.
  6. Drain and Serve: Use a slotted spoon to transfer the fritters to paper towels to absorb excess oil. Season immediately with a little more salt.
  7. Repeat: Continue frying until all the fritter mixture is gone.

Notes

Serve with a vibrant dipping sauce like zesty lemon aioli or yogurt-based sauce. These fritters are also great as a side dish or appetizer.
