A refreshing Cucumber Strawberry Salad perfect for summer picnics and light lunches, combining sweet strawberries and crisp cucumber with vibrant herbs.

  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Prepare your ingredients: Wash strawberries and cucumbers. Hull the strawberries and slice.
  2. Mix the dressing: Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl.
  3. Combine the base: Mix sliced strawberries and cucumbers gently in a large bowl.
  4. Add the fun stuff: Sprinkle in chopped mint or basil, cheese, and toasted nuts or seeds.
  5. Pour on the dressing: Drizzle the dressing over the salad and toss gently.
  6. Taste and adjust: Check for seasoning and adjust to your liking.

Notes

Best enjoyed fresh, but can be stored for up to two days in an airtight container. Prepare ingredients ahead of time but mix just before serving for optimal texture.
