The Ultimate Starbucks Copycat Lemon Loaf

A delicious homemade version of the Starbucks Lemon Loaf, featuring bright citrus flavors and a moist, tender crumb.

  • 1 cup granulated sugar
  • 1 ½ cups all-purpose flour
  • ½ cup sour cream or Greek yogurt
  • ½ cup vegetable oil
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons lemon zest (from about 2 lemons)
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon extract (optional)
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice (for the glaze)
  • ½ teaspoon lemon zest (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing a 9×5 inch loaf pan with butter or using parchment paper.
  3. Mix your wet ingredients in a large bowl: whisk together the eggs, granulated sugar, sour cream (or yogurt), vegetable oil, lemon zest, lemon juice, and vanilla extract.
  4. Combine your dry ingredients in another bowl: whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Mix the wet and dry ingredients together by gradually adding the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the oven for 50-60 minutes, checking for doneness with a toothpick.
  8. Cool the loaf in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Make the glaze by whisking together powdered sugar and fresh lemon juice until smooth.
  10. Drizzle the glaze over the cooled loaf and optionally sprinkle with additional lemon zest.

Notes

For variations, consider adding blueberries, poppy seeds, or chocolate chips. Store leftovers in an airtight container.
