Biscoff Cookie Butter Cake

A decadent multi-layer cake made with Biscoff cookie butter and topped with a rich frosting, perfect for any occasion.

  • 1 cup Salted Butter
  • 1 cup Cookie Butter
  • 2 cups Granulated Sugar
  • ½ cup Vegetable Oil
  • 5 large Egg Whites
  • 1 tablespoon Pure Vanilla Extract
  • 2 cups Cake Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 cup Whole Milk
  • ½ cup Sour Cream
  • 14 Biscoff Cookies (about 1.5 cups of broken cookies)
  • 1 cup Salted Butter (for frosting)
  • 1 cup Cookie Butter (for frosting)
  • 4 cups Powdered Sugar
  • ¼ cup Heavy Cream
  • 1 teaspoon Vanilla Extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing and flouring them.
  3. Cream together 1 cup of salted butter and 2 cups of granulated sugar until light and fluffy.
  4. Add in ½ cup of vegetable oil and 1 cup of cookie butter until combined.
  5. Incorporate 5 large egg whites and 1 tablespoon of vanilla extract; whisk until fully combined.
  6. Sift together 2 cups of cake flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt in a separate bowl.
  7. Combine the dry ingredients into the wet mixture, alternating with 1 cup of whole milk and ½ cup of sour cream.
  8. Fold in the broken Biscoff cookies.
  9. Pour the batter evenly between the two prepared cake pans.
  10. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  11. Cool in the pans for about 10 minutes before transferring to a wire rack.
  12. Prepare the frosting by beating together 1 cup of salted butter and 1 cup of cookie butter until smooth, then add 4 cups of powdered sugar, mixing until combined.
  13. Add ¼ cup of heavy cream and 1 teaspoon of vanilla extract, beating until light and fluffy.
  14. Frost the cake layers and decorate with cookie pieces as desired.

Notes
