Easy Crockpot Chicken Fajitas

A flavorful and no-fuss dinner made in a slow cooker, perfect for busy weeknights and customizable for everyone’s tastes.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 packet fajita seasoning
  • 1 cup chicken broth
  • Tortillas (flour or corn)
  • Toppings (sour cream, cheese, guacamole)

Instructions

  1. Prep your chicken by trimming excess fat.
  2. Chop the onion and bell peppers into thin strips.
  3. Layer the sliced onions at the bottom of the crockpot, followed by bell peppers.
  4. Add the chicken breasts on top of the veggies.
  5. Season with fajita seasoning and pour chicken broth over the top.
  6. Set the crockpot on low for 6-7 hours or high for 3-4 hours.
  7. Shred the chicken with two forks and mix with the veggies.
  8. Warm the tortillas in a pan or microwave.
  9. Serve with your favorite toppings.

Notes

Feel free to modify the recipe by substituting chicken with beans for a vegetarian version or adding jalapeños for extra heat.
