Easy Cucumber Salad Sandwiches

A refreshing and delightful sandwich that combines crisp cucumbers with a creamy filling, perfect for lunches, picnics, or light dinners.

  • 2 English cucumbers or Persian cucumbers
  • 8 oz cream cheese (or Greek yogurt)
  • 1/4 cup fresh dill, chopped
  • 2 tbsp lemon juice
  • Salt and pepper, to taste
  • 8 slices whole grain bread
  • Chives or green onions (optional)

Instructions

  1. Prep the cucumbers by washing them thoroughly and slicing thinly. Salt and let them sit on paper towels to draw out moisture.
  2. Make the creamy filling by blending cream cheese (or Greek yogurt) with dill and lemon juice in a bowl. Adjust seasoning with salt and pepper.
  3. Assemble the sandwiches by spreading the filling on one slice of bread, layering cucumber slices on top, adding optional chives or green onions, and closing with another slice of bread.
  4. Cut off the crusts, if desired, and slice the sandwich into triangles or half-moons. Serve immediately for best flavor or wrap for later.

Notes
