Easy Jalapeno Popper Cauliflower Casserole

A creamy and cheesy casserole featuring roasted cauliflower and the spicy kick of jalapenos, topped with a crispy breadcrumb crust.

  • 1 head of cauliflower, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup jalapenos, diced (fresh or pickled)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower for about 5-7 minutes until tender but still al dente.
  3. Blend the cream cheese, sour cream, and half of the shredded cheddar cheese with garlic powder, onion powder, and salt and pepper until smooth.
  4. Incorporate the steamed cauliflower and diced jalapenos into the creamy mixture.
  5. Transfer the mixture into a greased 9×13-inch casserole dish, spreading it evenly.
  6. Top with the remaining cheddar cheese and breadcrumbs, if using.
  7. Bake for about 25-30 minutes, until the cheese is melty and bubbly.
  8. Cool for 5-10 minutes before serving.

Notes

Feel free to customize with additional proteins or different cheeses. You can prepare it ahead of time and store it in the fridge before baking.
