Easy Low-Carb Chicken Spinach Mushroom Bake

A simple, delicious low-carb bake featuring chicken, spinach, and mushrooms in a creamy sauce.

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep the chicken by seasoning it with salt and pepper.
  3. Sauté the mushrooms in a large skillet with olive oil for 3-4 minutes.
  4. Add the minced garlic and cook for 1 minute.
  5. Add the spinach and stir for about 2 minutes until wilted.
  6. Create the creamy sauce by pouring in the heavy cream and adding the Parmesan cheese.
  7. Nestle the seasoned chicken breasts into the mixture.
  8. Bake for 25-30 minutes until the chicken is cooked through.
