Creamy and sweet Strawberry Cheesecake Bars perfect for any gathering or cozy night in.

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter (melted)
  • 2 packages cream cheese (16 ounces total, softened)
  • 2 large eggs
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 cups fresh strawberries (diced)
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar (packed)
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter.
  3. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan.
  4. Pop the crust into the preheated oven for 8-10 minutes.
  5. In a large bowl, beat the softened cream cheese until smooth and creamy.
  6. Add the eggs, granulated sugar, vanilla extract, and kosher salt, beating on low speed until incorporated.
  7. Gently fold in the diced strawberries.
  8. Pour this mixture over your cooled crust, spreading it evenly.
  9. Combine the flour, light brown sugar, and salt in a separate bowl.
  10. Drizzle in the melted butter and mix until crumbly.
  11. Sprinkle the crumb topping evenly over the cheesecake layer.
  12. Return the pan to the oven for 30-35 minutes.
  13. Let the bars cool at room temperature for about 30 minutes before refrigerating for at least 4 hours or overnight.

Notes

Serve with fresh strawberries and whipped cream. These bars freeze well for up to three months.
