Easy Pumpkin Gnocchi

A delightful and simple recipe for homemade pumpkin gnocchi, perfect for autumn and beyond.

  • 2 ⅗ cups pumpkin (cubed)
  • ⅔ cups starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup all-purpose flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the cubed pumpkin and starchy potato on a baking sheet lined with parchment paper, drizzling with olive oil and salt. Roast for about 25-30 minutes.
  2. Allow the roasted pumpkin and potato to cool slightly, then purée them until smooth.
  3. In a large bowl, combine the pumpkin-potato purée with salt and flour. Mix until a soft dough forms.
  4. Dust your work surface with flour, divide the dough into pieces, roll into ropes, and cut into small pieces.
  5. Bring a large pot of salted water to a boil. Drop gnocchi in batches, cooking until they float (about 2-3 minutes).
  6. In a skillet, melt the vegan butter over medium heat, add fresh sage, and cook until golden brown. Add cooked gnocchi and toss gently.

Notes

For extra flavor, serve with toasted pine nuts, balsamic reduction, or nutritional yeast for a vegan option.
