Strawberry Pretzel Jello Salad

A delightful summer dessert that combines salty pretzels, creamy filling, and fresh strawberries into a vibrant salad.

  • 2 1/2 cups pretzels, coarsely chopped
  • 1/4 cup granulated white sugar
  • 1/2 cup butter, melted
  • 16 ounces Cool Whip or Truwhip
  • 8 ounces cream cheese
  • 1 cup granulated white sugar
  • 6 ounces instant strawberry Jello
  • 2 cups boiling water
  • 1 quart strawberries, hulled and sliced

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the coarsely chopped pretzels, 1/4 cup of granulated sugar, and melted butter.
  2. Spread the pretzel mixture evenly in an ungreased 9×13-inch baking dish and bake for about 10 minutes, or until golden brown.
  3. Make the creamy layer: In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the 1 cup of granulated sugar and gently fold in the whipped topping.
  4. Layer the creamy mixture over the cooled pretzel crust carefully.
  5. Dissolve the Jello by pouring the powder into a bowl and adding the boiling water, stirring until fully dissolved. Let it cool for 10-15 minutes.
  6. Add the sliced strawberries to the Jello mixture and pour it over the cream layer.
  7. Chill the dish covered in plastic wrap in the fridge for at least 4 hours, or overnight.

Notes

Best made a day in advance. Serve with extra whipped cream and fresh mint for garnish.
