Cheesecake-Stuffed Apple Cider Cookies

  • 3/4 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the butter and sugar until fluffy.
  3. Add the apple cider and egg, mixing until combined.
  4. Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
  5. Incorporate the dry ingredients into the wet ingredients, mixing gently.
  6. Prepare the cheesecake filling by beating together cream cheese, powdered sugar, and vanilla.
  7. Chill the dough in the fridge for about 30 minutes (optional).
  8. Scoop a portion of dough, flatten it, place a dollop of filling in the center, and roll it into a ball.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on wire racks.
