Pumpkin Oatmeal Cream Pies

A cozy fall treat featuring soft, chewy oatmeal cookies filled with creamy frosting, infused with pumpkin and warm spices.

  • 1/3 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1 cup quick oats
  • 4 ounces cream cheese
  • 23 cups powdered sugar
  • 1 tablespoon whipping cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the flour, baking soda, salt, and spices in a bowl.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the pumpkin puree, molasses, egg yolk, and vanilla, mixing until well combined.
  5. Combine the wet and dry ingredients until just mixed.
  6. Fold in the oats until just combined.
  7. Scoop dough onto baking sheets and bake for 10-12 minutes.
  8. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  9. Beat together the cream cheese, powdered sugar, vanilla, and salt until smooth.
  10. Assemble the pies by spreading cream filling between two cookies.

Notes

For added flavor, consider mixing in chopped nuts or drizzling melted chocolate on top.
