French Nectarine Blueberry Galette

  • 2 ripe nectarines, sliced
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 sheet cream cheese pastry (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the fresh blueberries, sliced nectarines, sugar, vanilla extract, and lemon juice in a medium bowl and let sit.
  3. Roll out your pastry into a rough circle, about 12 inches in diameter.
  4. Transfer the rolled-out pastry onto a parchment-lined baking sheet.
  5. Fold the edges of the pastry over the fruit, creating a pleated effect.
  6. Brush the edges with egg wash or plant milk.
  7. Sprinkle coarse sugar over the folded edges of the crust.
