French Strawberry Cake

A delicious and beautiful cake made with layers of soft buttery cake, fresh strawberries, and whipped cream, perfect for any gathering.

  • 1 stick unsalted butter (softened)
  • 1 1/4 cups granulated sugar (divided)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 16 ounces fresh strawberries (sliced)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.
  2. Cream the softened butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs, one at a time, followed by the vanilla extract, mixing until fully combined.
  4. Mix the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the sour cream.
  6. Combine just until no more flour streaks are visible, then pour the batter into the prepared cake pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Can be served with more fresh strawberries and whipped cream on top. For variations, try adding citrus zest, mixed berries, or even chocolate.
