  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. Whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt in a large bowl.
  3. Beat butter, brown sugar, and molasses in another bowl until fluffy, then mix in egg and vanilla.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.
  6. In a medium bowl, beat cream cheese and powdered sugar until smooth to make the filling.
  7. Scoop tablespoon-sized balls from the dough, flatten, add cheesecake filling, and seal.
  8. Roll cookies in sugar and cinnamon mixture and place on a baking sheet.
  9. Bake for about 10-12 minutes. Let cool before transferring to a wire rack.
  10. Serve warm or cool and store in an airtight container.
