Goat Cheese Stuffed Mini Peppers

Colorful mini sweet bell peppers stuffed with creamy goat cheese and drizzled with balsamic glaze. An impressive yet easy appetizer perfect for any gathering.

  • 1 pound mini sweet bell peppers (about 12 peppers)
  • 10 ounces goat cheese
  • Balsamic glaze (to drizzle)
  • Honey (to drizzle)
  • 2 tablespoons fresh thyme (or dried)
  • Black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the mini bell peppers and slice them in half lengthwise, removing seeds.
  3. Add goat cheese to a bowl, crumble, and mix with thyme and black pepper.
  4. Fill each pepper half with the goat cheese mixture.
  5. Place the stuffed peppers on a baking sheet lined with parchment paper, drizzle with honey and balsamic glaze.
  6. Bake for about 15-20 minutes until peppers are tender and cheese is gooey.
  7. Drizzle with more balsamic glaze and garnish with fresh thyme before serving.

Notes

These peppers can be made ahead of time and baked just before serving. They are also great as leftovers or used in salads.
