  • 1 cup quinoa
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh herbs (like parsley or chives), for garnish

Instructions

  1. Prepare the Quinoa: Rinse 1 cup of quinoa under cold water in a fine-mesh sieve. Combine it with 2 cups of water or broth in a saucepan, bring to a boil, then reduce to a simmer. Cover and let it cook for about 15 minutes or until the liquid is absorbed. Fluff with a fork.
  2. Season the Steak: Sprinkle salt and pepper on both sides and rub in a tablespoon of olive oil. Let it marinade for about 30 minutes.
  3. Preheat the Grill: Get your grill to around 450°F. If using a stovetop grill pan, heat over medium-high heat.
  4. Prepare the Zucchini: Toss the sliced zucchini with a tablespoon of olive oil, salt, and pepper.
  5. Grill the Steak: Place the steak on the grill and cook for about 4-5 minutes on one side. Flip and cook for an additional 3-4 minutes for medium-rare.
  6. Grill the Zucchini: Add the zucchini slices to the grill and cook for 2-3 minutes per side.
  7. Make the Creamy Sauce: In a bowl, combine ½ cup sour cream, minced garlic, and 1 tablespoon lemon juice. Mix until smooth.
  8. Rest the Steak: Remove the steak from the grill and let it rest for about 5 minutes.
  9. Slice the Steak: Slice the steak against the grain into thin strips.
  10. Assemble the Bowl: Start with quinoa, layer sliced steak and grilled zucchini, drizzle with creamy sauce, and garnish with fresh herbs.
