Hearty Ham & Bean Soup

A comforting and flavorful ham and bean soup perfect for chilly days, packed with wholesome ingredients that warm your soul.

Ingredients

  • 2 cups cooked ham, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf (optional)
  • Fresh parsley, for garnish

Instructions

  1. Prep your ingredients by dicing the ham and chopping the carrots and celery.
  2. Sauté the diced ham in a large pot with olive oil over medium heat for 4–5 minutes.
  3. Add the carrots and celery, cooking for an additional 5 minutes.
  4. Introduce the broth and white beans, mixing gently.
  5. Season with salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20–30 minutes.
  6. Taste and adjust seasoning as needed.
  7. Serve the soup in bowls, garnished with parsley and crusty bread on the side.

Notes

Feel free to customize this soup by adding jalapeños for a spicy kick or blending part of the soup for a creamy texture.
