Healthy Grape Coffee Cake

A vibrant, moist, and scrumptious coffee cake packed with juicy grapes, perfect for brunch or dessert.

  • 1 cup purple grapes, halved
  • 1 cup green grapes, halved
  • 1 cup red grapes, halved
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup brown sugar
  • ½ cup rolled oats
  • ½ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing it or lining with parchment paper.
  3. Incorporate the softened butter and granulated sugar in a mixing bowl and cream until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each, and then add the vanilla extract.
  5. Combine the flour, baking powder, salt, and cinnamon in a separate bowl, then slowly add to the wet ingredients.
  6. Mix in the milk until just combined, then fold in the halved grapes.
  7. Transfer the batter to the prepared cake pan and sprinkle with brown sugar and rolled oats.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Pairs well with whipped cream or Greek yogurt.
