Healthy Ranch Chicken Salad

A flavorful and vibrant salad featuring tender chicken, mixed greens, and a creamy Greek yogurt ranch dressing, perfect for any occasion.

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1/2 cup Greek yogurt
  • 1 tablespoon ranch seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat your grill or pan: Bring your grill to medium heat or heat a skillet with a splash of olive oil over medium-high heat.
  2. Season the chicken: Sprinkle salt and pepper over both sides of the chicken breasts.
  3. Cook the chicken: Place the chicken on the grill or into the sizzling pan. Cook for about 6-7 minutes on each side, until the internal temperature reaches 165°F (75°C).
  4. Mix the Greek yogurt: In a small bowl, combine the Greek yogurt and ranch seasoning.
  5. Stir until smooth: Blend the mixture until it’s creamy and well-combined.
  6. Prep the greens: Rinse the mixed greens under cold water and pat them dry.
  7. Add the greens to a large bowl.
  8. Slice the avocado.
  9. Slice the chicken into bite-sized pieces after resting.
  10. Combine: Add the sliced chicken and avocado on top of the greens and drizzle with homemade ranch dressing.
  11. Give it a toss to mix everything together.
  12. Plate your salad and serve with whole grain crackers or whole wheat bread.

Notes
