Street Corn Creamy Cucumber Chicken Salad

A vibrant, refreshing salad blending the classic flavors of street corn with crunchy cucumbers and tender chicken, topped with a creamy dressing.

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Cook your chicken: Grill or roast it until cooked through, about 6-8 minutes per side depending on thickness. Let it cool before dicing.
  2. Prepare the corn: Grill fresh corn until charred, about 10 minutes, or drain canned corn.
  3. Chop your fresh ingredients: Dice the cucumber and finely chop the red onion.
  4. Mix the dressing: In a bowl, combine mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper. Whisk until smooth.
  5. Combine everything: Toss diced chicken, corn, cucumber, and red onion with the dressing.
  6. Chill: Cover and refrigerate for at least 30 minutes.
  7. Serve and garnish: Stir and taste before serving, adding crumbled feta on top if desired.

Notes

Great for meal prep; just add cucumbers fresh before eating. Can be made ahead of time and lasts for 2-3 days in the fridge.
