  • 2 lbs chicken thighs or breasts
  • 1 cup honey BBQ sauce
  • 4 medium potatoes, diced
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by coating it in the honey BBQ sauce.
  3. Tackle the potatoes by mixing them in a bowl with olive oil, garlic, salt, and pepper.
  4. Spread the potatoes on a baking sheet and bake for 25-30 minutes until crispy.
  5. Heat a skillet and sear the chicken for 3-4 minutes until golden.
  6. Transfer the skillet to the oven with the potatoes and bake for an additional 20-25 minutes.
  7. Sprinkle Parmesan over the potatoes in the last 5 minutes of baking.
  8. Plate the chicken with the cheesy potatoes and garnish with parsley.

Notes

You can swap chicken thighs with breasts, and feel free to experiment with different sauces and seasonings.
