Chocolate Strawberry Cheesecake Dessert Cups

  • 1 ½ cups chocolate sandwich cookies (finely crushed)
  • 4 tablespoons unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (cold)
  • ½ cup melted semi-sweet chocolate
  • ¾ cup strawberry puree or strawberry sauce
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the chocolate sandwich cookies in a zip-top bag or food processor until fine.
  3. Transfer the crumbs into a mixing bowl and stir in the melted butter until well combined.
  4. Press the mixture into the bottom of individual dessert cups or ramekins.
  5. Bake the crust for 8-10 minutes until slightly firm, then let cool.
  6. Beat the softened cream cheese in a large bowl until creamy.
  7. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.
  8. Whip the heavy cream in a separate bowl until stiff peaks form.
  9. Fold the whipped cream into the cream cheese mixture gently.
  10. Drizzle in the melted semi-sweet chocolate while folding to combine.
  11. Spoon the cheesecake filling into the cooled cookie crusts.
  12. Mix the strawberry puree with the granulated sugar in a small bowl.
  13. Pour the strawberry sauce on top of the cheesecake filling.
  14. Cover the cups with plastic wrap and refrigerate for at least 2-3 hours.

Notes

Top with fresh mint or additional chocolate drizzle for extra flair. These dessert cups can be prepared a day in advance.
