No-Bake Mini Cheesecake Cups

  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • Fresh fruit or chocolate for topping (optional)

Instructions

  1. Prepare the crust: In a bowl, combine the graham cracker crumbs and melted butter. Mix well until all the crumbs are fully coated.
  2. Set up your cups: Get your serving cups ready and spoon about a tablespoon of the crumb mixture into each cup, pressing gently to create a base.
  3. Make the cheesecake filling: Beat the softened cream cheese until smooth, then add in the powdered sugar and vanilla extract; beat until well combined.
  4. Fold in the whipped cream gently using a spatula to maintain the airy texture.
  5. Assemble the mini cheesecakes by layering the cheesecake filling over the crust in each cup.
  6. Chill the cups in the fridge for at least 2 hours.
  7. Top and serve with fresh fruit, chocolate, or other toppings of your choice.
