Loaded Taco Potato Soup

A comforting soup that combines the classic flavors of taco night with the creamy goodness of loaded potatoes.

  • 1 lb Ground Beef
  • 4 cups Potatoes, chopped
  • 2 tbsp Taco Seasoning
  • 1 cup Cheddar Cheese, shredded
  • 4 cups Broth (chicken or vegetable)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the Ground Beef in a large pot over medium heat with a drizzle of olive oil until browned, about 5-7 minutes.
  2. Add the Taco Seasoning and stir well, letting it toast for a minute.
  3. Chop the Potatoes into bite-sized pieces and add them to the pot with the beef and seasoning.
  4. Pour in enough Broth to cover the potatoes (about 4 cups) and bring to a gentle boil, then reduce to a simmer for 20-25 minutes.
  5. Blend the soup using an immersion blender or regular blender until creamy, leaving some chunks for texture.
  6. Add the Cheese and stir until melted. Optionally, add a splash of heavy cream or sour cream for extra creaminess.
  7. Taste and adjust seasoning with salt, pepper, or hot sauce if desired.

Notes

Serve with garnishes like chopped green onions, sour cream, or crushed tortilla chips for added texture. Pair with crusty bread or cornbread.
