Strawberry Cheesecake Bars

Delightful strawberry cheesecake bars with a buttery crust and luscious filling, perfect for summer occasions.

  • 2 cups (200g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon fine sea salt
  • 1/2 cup (113g) unsalted butter, melted
  • 24 oz (680g) full-fat cream cheese, softened
  • 3/4 cup (150g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (120g) full-fat sour cream, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon all-purpose flour
  • Pinch of fine sea salt
  • 2 cups (300g) fresh strawberries, hulled and diced small
  • 3 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/2 teaspoon pure vanilla extract
  • Fresh whole strawberries halved (for garnish)
  • A light dusting of powdered sugar (optional)
  • Dollops of freshly whipped cream on each bar

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 9×9 inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, granulated sugar, and fine sea salt in a bowl. Add melted butter and stir until mixed.
  3. Press the crumb mixture into the bottom of the prepared pan.
  4. Bake for 10-12 minutes until golden brown.
  5. Beat cream cheese in a large bowl until smooth. Gradually add sugar, then eggs one at a time, mixing well.
  6. Add sour cream, vanilla, lemon juice, flour, and salt, mixing until smooth.
  7. Pour filling over the crust and bake for 30-35 minutes until edges are set.
  8. Cool at room temperature for about an hour, then refrigerate for 2-3 hours.
  9. Mix diced strawberries with sugar, lemon juice, cornstarch, and cold water in a saucepan. Cook until thickened.
  10. Spread cooled strawberry mixture over chilled cheesecake.
  11. Refrigerate for another 30 minutes.
  12. Slice into bars and serve with garnishes.

Notes

Store leftovers in an airtight container for up to 4-5 days. These bars can also be frozen for up to 2 months.
