Spinach Salad with Nectarines and Pecans

A vibrant spinach salad topped with sweet nectarines and crunchy pecans, perfect for any occasion.

Ingredients

  • 10 ounces fresh baby spinach
  • 1 large nectarine (pitted and sliced)
  • 1/2 cup candied pecans
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp smooth or whole-grain Dijon mustard
  • Pinch kosher salt
  • A few turns freshly-ground black pepper

Instructions

  1. Prep your spinach: Wash thoroughly under cold water and spin dry.
  2. Slice the nectarine into thin wedges.
  3. Make the dressing by whisking together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  4. Toast the pecans in a skillet over medium heat for about 5 minutes.
  5. Assemble the salad by adding spinach, nectarines, and pecans to a large bowl, then toss with dressing.
  6. Taste and adjust seasoning as needed.
