Refreshing Watermelon Salad

A vibrant watermelon salad with berries and a hint of lime, perfect for summer picnics and barbecues.

Ingredients

  • 5 cups cubed watermelon
  • 2 cups sliced strawberries
  • 1 cup sliced cherries (pitted)
  • 1 cup raspberries
  • 1 cup blueberries
  • Juice of 1 lime
  • 1 tablespoon agave syrup
  • Chopped mint leaves (for garnish)
  • Chia seeds (for garnish)

Instructions

  1. Prepare the watermelon by slicing it in half, cutting into wedges, removing the rind, and dicing into cubes.
  2. Slice the strawberries and hull them before cutting into thin rounds or wedges.
  3. Pit and slice the cherries into halves or quarters.
  4. Rinse the raspberries and blueberries under cold water and pat dry.
  5. Toss the watermelon, strawberries, cherries, raspberries, and blueberries in a large mixing bowl.
  6. Add the lime juice and agave syrup, drizzling over the fruit mixture.
  7. Garnish with mint and chia seeds before serving.
  8. Chill in the fridge for 30 minutes for the best flavor.

Notes

This salad can be prepared ahead of time; just keep the fruit separated until serving. Great for summer cookouts!
