Jerk Chicken & Mango Slaw Bowls with Honey Lime Cream

  • 2 lbs Chicken Thighs or Breasts
  • 2 tbsp Jerk Seasoning
  • 1 Mango (diced)
  • 2 cups Cabbage (shredded)
  • 1 Red Bell Pepper (sliced)
  • 1 Carrot (shredded)
  • 2 tbsp Honey
  • 2 tbsp Lime Juice
  • ½ cup Sour Cream or Greek Yogurt
  • Salt & Pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, mix 2 tablespoons of jerk seasoning with your choice of chicken (about 2 pounds). Let marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat and add oil. Sear the marinated chicken for about 5-6 minutes on each side until cooked.
  3. Prepare the Mango Slaw: In a bowl, combine shredded cabbage, diced mango, sliced bell pepper, and shredded carrot. Toss with lime juice and season with salt.
  4. Make the Honey Lime Cream: In a bowl, whisk together sour cream, honey, and lime juice until smooth. Adjust sweetness if desired.
  5. Assemble the Bowls: Layer mango slaw, followed by diced jerk chicken, and drizzle with honey lime cream. Garnish as desired.

Notes

For a tropical twist, add diced pineapple to the slaw. For a spicy kick, mix in jalapeños to the chicken marinade.
