Juicy Grilled California Avocado Chicken

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken: In a large bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, and pepper. Add the chicken breasts and coat them well in the mixture. Cover and let it marinate for at least 30 minutes in the refrigerator.
  2. Preheat the grill: Fire up your grill to medium-high heat.
  3. Grill the chicken: Remove the chicken from the marinade and place on the grill. Cook for 6-7 minutes on one side, then flip and cook for another 5-7 minutes or until the internal temperature reaches 165°F.
  4. Prepare the avocados: Slice the avocados in half, remove the pit, scoop the flesh into a bowl, add lime juice, salt, and pepper, and mash together.
  5. Grill the cherry tomatoes: Toss the tomatoes in olive oil, salt, and pepper, then grill them for about 3-4 minutes until softened.
  6. Plate the dish: Once the chicken is cooked, let it rest for 5 minutes, then plate with avocado mash and grilled cherry tomatoes. Garnish with cilantro.

Notes

For extra flavor, consider marinating the chicken overnight. Serve with fresh lime and a light salad.
