Keto Magic Cookies

Delicious and easy-to-make keto-friendly cookies made with coconut, nuts, and chocolate chips for a satisfying treat.

  • 4 Large Egg Yolks
  • 1 Tbsp. (14g) Butter
  • 3 ½ Tbsp. (50g) Coconut Oil
  • 1/3 Cup (50g) Confectioners Swerve
  • 1 Cup (100g) Unsweetened Coconut Flakes
  • Heaping 1/3 Cup (45g) Chopped Pecans
  • Heaping 1/3 Cup (45g) Chopped Walnuts
  • 2/3 Cup (100g) Semi-Sweet Chocolate Chips (Optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep your baking sheet with parchment paper or a silicone mat.
  3. Mix the wet ingredients: egg yolks, melted butter, and coconut oil in a mixing bowl until smooth.
  4. Add the sweetener, stirring in confectioners Swerve until well incorporated.
  5. Incorporate the dry ingredients: gently fold in coconut flakes, chopped pecans, and chopped walnuts. Add chocolate chips if using.
  6. Scoop out the mixture and shape into balls, placing them 2 inches apart on the baking sheet.
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
