Zesty Key Lime Cheesecake

A creamy, tangy Key Lime Cheesecake with a graham cracker crust, perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup fresh lime juice
  • 1 tablespoon lime zest
  • Whipped cream for topping

Instructions

  1. Prep Your Baking Dish – Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Make the Crust – Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the prepared pan.
  3. Bake the Crust – Bake for 8-10 minutes until golden, then let cool.
  4. Prepare the Filling – Beat cream cheese until smooth, incorporate powdered sugar, then mix in lime juice and zest.
  5. Bake the Cheesecake – Pour filling into crust, bake for 55-60 minutes until set around the edges.
  6. Cool and Chill – Allow to cool completely, then refrigerate for at least 4 hours, preferably overnight.
  7. Serve Your Cheesecake – Release the sides of the springform pan and top with whipped cream and lime zest before slicing.

Notes

Chill overnight for best flavor melding. Use a hot knife for smooth slices.
