Lasagna Soup

A comforting and simple twist on traditional lasagna, combining hearty meat, rich tomato broth, and melty cheeses.

  • 1 lb Ground Beef
  • 8 oz Lasagna Noodles (broken into small pieces)
  • 28 oz Canned Tomatoes (diced or crushed)
  • 15 oz Ricotta Cheese
  • 1 cup Mozzarella Cheese (shredded)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tsp Italian Seasoning
  • 4 cups Chicken or Vegetable Broth
  • 2 tbsp Olive Oil

Instructions

  1. Brown the Beef: In a large pot, heat a couple of drizzles of olive oil over medium-high heat. Add the ground beef and season generously with salt and pepper. Use a spatula to break it up as it cooks, aiming for a beautiful brown color, about 5-7 minutes.
  2. Add Onion and Garlic: Toss in the chopped onion and minced garlic. Sauté together for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
  3. Stir in the Tomatoes and Broth: Add the canned tomatoes and broth. Bring to a gentle simmer and stir in your Italian seasoning. Let simmer for about 10 minutes.
  4. Add Noodles: Break the lasagna noodles into smaller pieces and add them to the pot. Stir gently to combine, cover, and cook according to package directions, about 10-12 minutes.
  5. Time for Cheese: Once the noodles are cooked to al dente, dollop ricotta cheese into the pot and stir to combine, creating a creamy texture.
  6. Final Touches: Sprinkle mozzarella over the top, cover the pot, and let the residual heat melt the cheese for about 5 minutes.

Notes

Serve with garlic bread or a simple side salad. Can be made ahead and stored in the fridge or frozen for later.
