Lasagna Soup

  • 1 lb Ground Beef
  • 8 oz Lasagna Noodles
  • 28 oz Canned Crushed Tomatoes
  • 14 oz Canned Diced Tomatoes
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tsp Italian Seasoning
  • Fresh Basil for garnish
  • 4 cups Broth
  • Salt to taste
  • Olive Oil for cooking

Instructions

  1. Brown the Ground Beef: Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with your spoon as it cooks, about 5-7 minutes.
  2. Sauté the Aromatics: Add chopped onions and minced garlic. Cook for about 3-4 minutes until onions are translucent.
  3. Add the Tomatoes and Seasoning: Pour in the canned tomatoes, add Italian seasoning, and let this simmer for about 10 minutes.
  4. Incorporate the Noodles: Break the lasagna noodles into pieces and stir into the pot with the broth. Bring to a boil, then simmer for about 10-12 minutes.
  5. Finish with Cheese: Right before serving, add dollops of ricotta into the soup and stir gently to combine. Top with mozzarella cheese and cover to melt.
  6. Garnish and Enjoy: Serve hot with fresh basil and a drizzle of olive oil.

Notes

This soup is even better as leftovers! You can freeze it for up to 3 months.
