Lemon Blondies

These bright, zesty Lemon Blondies are irresistibly chewy and perfect for any occasion—bringing a burst of sunshine in every bite!

  • 1 cup (226g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon zest (about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 ½ cups (190g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (120g) powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • Optional: extra lemon zest for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mix the melted butter and granulated sugar in a large mixing bowl until smooth and creamy.
  3. Incorporate the eggs one at a time, beating well after each addition.
  4. Zest and add the fresh lemon zest and lemon juice to the mixture, mixing until evenly distributed.
  5. Combine the all-purpose flour and salt in a separate bowl, then gradually stir this dry mixture into the wet ingredients.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for about 25 minutes, or until the edges are lightly golden and a toothpick comes out with moist crumbs.
  8. Cool the blondies in the baking dish for 10-15 minutes, then prepare the glaze.
  9. Drizzle the glaze on top of the cooled blondies and finish with lemon zest if desired.
  10. Slice into squares and serve once fully cooled.

Notes

These Lemon Blondies can be stored covered at room temperature and they can be frozen for up to three months. For variations, consider adding blueberries or coconut for a twist!
