Quick Lemon Parmesan Couscous

A bright and zesty couscous dish that’s quick to prepare, featuring fresh lemon and creamy parmesan. Perfect for busy weeknights or impromptu gatherings.

  • 1 cup medium grain couscous
  • 1 ½ cups vegetable broth
  • 1 fresh lemon (juice & zest)
  • ½ cup freshly grated parmesan
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (finely chopped)
  • Fresh herbs (e.g., parsley, chives, mint)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Prepare your broth: In a medium saucepan, bring 1 ½ cups of vegetable broth to a simmer.
  2. Add the couscous: Once the broth is simmering, add 1 cup of medium grain couscous, stir gently, cover, and let sit for 5 minutes.
  3. Fluff with a fork: After 5 minutes, uncover and use a fork to fluff the couscous.
  4. Infuse with flavor: Drizzle in 2 tablespoons of olive oil, juice and zest of 1 lemon, and the chopped garlic. Stir well.
  5. Cheesy goodness: Add ½ cup freshly grated parmesan and stir until melted into the couscous.
  6. Toss in the fresh herbs, and season with salt and pepper. Stir to combine.
  7. Taste and adjust seasoning if necessary.

Notes

Start with less lemon juice and adjust according to your taste. Always taste as you go for best results.
