Lemon Ricotta Pasta

A creamy and zesty pasta dish that is quick and easy to make, perfect for busy weeknights or cozy date nights.

  • 1 cup ricotta cheese
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta of your choice and cook according to package instructions until al dente, about 8-10 minutes. Reserve about a cup of pasta water before draining.
  2. Prepare the lemon ricotta mixture: In a bowl, mix the ricotta cheese, lemon zest, and lemon juice until creamy. If it’s too thick, stir in a splash of reserved pasta water.
  3. Sauté the garlic: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  4. Combine the pasta and ricotta mixture: Drain the pasta and add it directly to the skillet. Add the ricotta mixture, stirring gently to coat the pasta. If the sauce feels too thick, add more reserved pasta water.
  5. Season it up: Add salt and freshly cracked black pepper to taste.
  6. Plate and garnish: Serve the pasta warm, garnished with fresh herbs and a sprinkle of grated Parmesan cheese.

Notes

For variations, consider adding grilled chicken, sautéed vegetables, or nuts for extra flavor and texture.
