Lime Popsicles

A refreshing and zesty homemade treat perfect for hot summer days, made with fresh lime juice and a hint of mint.

Ingredients

  • 2 cups water
  • 2/3 cup honey (or sugar)
  • 3/4 cup fresh squeezed lime juice (about 810 limes)
  • 1/4 cup mint, finely chopped

Instructions

  1. Make the Simple Syrup: In a medium saucepan, combine the water and honey (or sugar) over medium heat. Stir until completely dissolved.
  2. Mix the Lime Juice and Mint: In a bowl, combine the fresh lime juice and finely chopped mint.
  3. Combine: Once the simple syrup has cooled, mix it with the lime juice and mint mixture until well combined.
  4. Pour into Molds: Carefully pour the mixture into your popsicle molds. Leave a little room at the top because they will expand as they freeze!
  5. Freeze: Insert the sticks and freeze for at least 240 minutes or until completely solid.
  6. Serve & Enjoy: When you’re ready to enjoy, run the molds under warm water for a few seconds to help release the popsicles.

Notes

These popsicles can be customized with additional flavors like coconut or berries, and can also be made into cocktail popsicles by adding rum.
