Loaded Baked Potato Casserole

A comforting casserole loaded with crispy bacon, creamy sour cream, and melted cheese, perfect for family gatherings and cozy dinners.

  • 4 large Russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup green onions, chopped
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Clean the potatoes and poke holes in them. Bake for about 45-60 minutes until tender.
  2. Cook the bacon in a skillet over medium heat until crispy, about 7-10 minutes. Transfer to a plate and crumble.
  3. Slice the baked potatoes in half and cube them into bite-sized pieces. Put them in a large mixing bowl.
  4. Add the sour cream, cheddar cheese, crumbled bacon, green onions, milk, garlic powder, salt, and pepper. Gently fold together.
  5. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly. Sprinkle more cheese on top if desired.
  6. Bake for 20-25 minutes until bubbly and cheese is melted. Broil for 2-3 minutes for a crispy top if desired.

Notes

This casserole can be prepared in advance and refrigerated for up to 24 hours. Reheat it in the oven or microwave until warmed through.
