Loaded Steak Potatoes with Savory Cream Sauce

Golden, crispy potato skins filled with succulent steak and crowned with a decadent cream sauce. A comforting dish perfect for any occasion.

  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 1 ½ tablespoons sea salt
  • 2 pounds steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 2 tablespoons Cajun seasoning, low sodium
  • 4 tablespoons avocado oil, divided
  • 6 tablespoons butter, softened
  • 2 tablespoons garlic, minced
  • 1 ½ cups heavy cream
  • 2/3 cup parmesan, grated
  • 2 tablespoons fresh parsley, minced
  • 2 wedges lemon
  • ½ teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by rinsing and scrubbing them; pierce with a fork, drizzle with olive oil, and sprinkle with sea salt.
  3. Bake the potatoes for about 45-50 minutes, until crispy.
  4. Cook the steak in a skillet with avocado oil, seasoned with kosher salt and Cajun seasoning; sear for about 4-5 minutes per side.
  5. Make the cream sauce by melting butter, adding minced garlic, then heavy cream, parmesan, and seasonings.
  6. Assemble the potatoes by slicing them open and fluffing the insides.
  7. Stuff the potatoes with sliced steak and drizzle with cream sauce.
  8. Serve immediately, optionally with a side salad.

Notes

For extra flavor, consider topping with crispy bacon bits or a spicy garlic sauce.
