Magic Lemon Cobbler

A sweet and tangy lemon cobbler that creates a delicious pudding-like filling beneath a golden, crispy layer.

  • 1/2 cup (1 stick) Butter
  • 1 cup All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Granulated Sugar
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Extract (optional)
  • 21 oz Can Lemon Pie Filling (or homemade equivalent)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 1/2 cup of butter in a medium saucepan over low heat.
  3. Pour the melted butter into a 9×13-inch baking dish.
  4. Whisk together 1 cup of flour, 1 1/2 teaspoons of baking powder, 1/4 teaspoon of salt, and 1 cup of sugar in a mixing bowl.
  5. Combine in another bowl 1 cup of buttermilk, 1 teaspoon of vanilla extract, and 1 teaspoon of lemon extract (if using).
  6. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  7. Spoon the batter over the melted butter in the baking dish.
  8. Pour the lemon pie filling over the top of the batter without mixing.
  9. Bake for 35-40 minutes or until the edges are golden brown and the center is set.
  10. Cool for 10-15 minutes before serving.

Notes

Serve with whipped cream or vanilla ice cream for an extra indulgent treat.
