Mango and Dragon Fruit Chia Pudding

A vibrant and nutritious chia pudding layered with tropical mango and dragon fruit, perfect for breakfast or a snack.

Ingredients

  • 350 ml coconut milk (or milk of choice)
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla extract
  • 65 g chia seeds (approx. 6 tbsp)
  • ½ pink dragon fruit (blended)
  • 1 large Alfonso mango (diced)
  • Vanilla coconut yogurt (for topping)

Instructions

  1. Combine chia seeds, coconut milk, maple syrup, and vanilla extract in a medium bowl. Stir well and let sit for 10 minutes.
  2. Slice the dragon fruit in half, scoop out the flesh, and blend until smooth.
  3. Layer the chia mix and pureed dragon fruit in a glass or bowl. Repeat until full.
  4. Chill the layered pudding in the fridge for at least 1 hour.
  5. Top with diced mango and a dollop of vanilla coconut yogurt before serving.

Notes

Chia pudding can be stored in the fridge for up to 5 days and is perfect for meal prep. Seasonally adaptable with various fruits and flavors.
