Moist Brown Sugar Banana Muffins

These moist banana muffins are made with brown sugar and are perfect for cozy mornings.

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground Cinnamon (Optional)
  • 3 medium Ripe Bananas
  • 1 cup Light Brown Sugar
  • 1/3 cup Unsalted Butter (Melted)
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk
  • 1/2 cup Chopped Nuts (Like walnuts or pecans)
  • 1/2 cup Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it or lining it with paper liners.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Combine melted butter, brown sugar, eggs, vanilla extract, and milk with the mashed bananas.
  5. Mix the dry ingredients: combine flour, baking soda, salt, and cinnamon in another bowl.
  6. Bring the dry mixture into the wet mixture gradually, mixing just until moistened.
  7. Fill the muffin cups with batter, filling each about 2/3 full.
  8. Bake in the oven for 18-22 minutes, or until a toothpick comes out clean.
  9. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins can be served warm with butter or cream cheese. You can also add drizzle of honey or maple syrup on top.
