Pancake Sausage Casserole

A delightful layered breakfast casserole combining fluffy pancakes, savory sausage, and two types of cheese, perfect for family gatherings.

  • 3 cups pancake mix
  • 2½ cups milk
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • lbs breakfast sausage (cooked and crumbled)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cream cheese (softened, optional)
  • Butter for greasing
  • Extra cheese for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing it with butter.
  3. Mix the pancake batter in a bowl with pancake mix, milk, eggs, melted butter, and vanilla extract.
  4. Cook the sausage in a skillet over medium heat until browned and crumbly.
  5. Layer half of the pancake batter, half of the cooked sausage, half of the cheddar cheese, and a third of the mozzarella cheese in the baking dish. Optionally, add cream cheese.
  6. Repeat the layering, finishing with the remaining pancake batter topped with the rest of the cheese.
  7. Bake for 30-40 minutes, until golden and fully cooked.
  8. Cool for 10 minutes, slice, and serve warm.

Notes

Serve with warm maple syrup and fresh fruit for a complete breakfast.
