Refreshing Mediterranean Cantaloupe Salad

A vibrant salad bursting with the flavors of summer, featuring juicy cantaloupe, Kalamata olives, fresh herbs, and a zesty dressing.

  • 1/4 cup red onion, finely chopped
  • 3 tbsp lemon juice, freshly squeezed
  • 2 tsp honey
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 medium cantaloupe, peeled, halved, seeded, and cubed (about 3 to 4 cups)
  • 3 tbsp fresh parsley, finely chopped, divided
  • 3 tbsp fresh mint leaves, finely chopped, divided
  • 3 tbsp Kalamata olives, finely chopped, divided

Instructions

  1. Prep your produce: Start by cutting the cantaloupe! Peel it, slice it in half, and scoop out those seeds. Then, cube it into bite-sized pieces.
  2. Chop the herbs and onions: Finely chop the red onion, parsley, and mint leaves.
  3. Make the dressing: In a small bowl, whisk together the freshly squeezed lemon juice, honey, paprika, cayenne pepper, and a pinch of salt.
  4. Combine and toss: In a large mixing bowl, combine the cubed cantaloupe, chopped red onion, olives, and half of the parsley and mint. Pour the dressing over the top and gently toss everything together.
  5. Rest for a minute: Let your salad sit for about 10–15 minutes before serving.
  6. Serve it up: Once it’s rested, give your salad one last toss and transfer it to a serving platter or individual bowls.

Notes

This salad can be made ahead of time; however, combine the ingredients right before serving for optimal freshness.
