  • 1824 large strawberries
  • 1 cup heavy whipping cream
  • 1 (8 ounce) package of cream cheese (softened)
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)
  • 1/2 cup graham cracker crumbs

Instructions

  1. Prepare the strawberries: Rinse under cold water and hull to create a hollow space.
  2. Whip the cream: Beat the heavy whipping cream until medium peaks form.
  3. Make the cheesecake filling: Beat softened cream cheese until smooth, then mix in sour cream, sugar, vanilla extract, and lemon juice.
  4. Fold in the whipped cream to the cream cheese mixture.
  5. Add the graham cracker crumbs into the cheesecake filling.
  6. Fill the strawberries with the cheesecake mixture.
  7. Garnish with remaining graham cracker crumbs and chill before serving.

Notes

For a lighter version, consider using Greek yogurt instead of sour cream. These can be made dairy-free with appropriate substitutions.
