Thai Chicken Wrap with Crunchy Asian Slaw

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

  • ⅓ cup creamy peanut butter
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 12 tablespoons warm water
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • ½ red bell pepper (thinly sliced)
  • 2 scallions (thinly sliced)
  • ¼ cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • 4 large flour tortillas or flatbreads
  • Extra cilantro and chopped peanuts for garnish (optional)

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken thighs, 2 tablespoons of soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes. Mix until the chicken is well coated. Let it marinate for about 15-30 minutes.
  2. Cook the Chicken: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated chicken. Cook for roughly 5-7 minutes on each side, flipping until golden brown and cooked through. Once done, set the chicken aside to rest before slicing it.
  3. Make the Peanut Sauce: In a bowl, combine the creamy peanut butter, 2 tablespoons of soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water. Whisk until smooth.
  4. Prepare the Crunchy Asian Slaw: In another large bowl, toss together the shredded green cabbage, red cabbage, julienned carrots, red bell pepper, scallions, and cilantro. In a small bowl, mix lime juice, rice vinegar, sugar, and a pinch of salt. Pour this dressing over your slaw and give it a good toss.
  5. Assemble the Wraps: Warm your tortillas or flatbreads slightly. Spread a generous amount of peanut sauce over the wrap, add sliced chicken, and top with a hefty handful of slaw. Roll it up to keep everything secure.
  6. Serve and Enjoy!: Top with extra crushed peanuts and cilantro if desired. Serve immediately with additional peanut sauce on the side.

Notes

These wraps are best enjoyed fresh but can be prepared in advance. Store slaw separately to keep it crisp until serving.
